Swirled Peanut Butter Bars Cookie

  • Peanut butter icing:
  • 1/2 cup unsalted butter, at room temp
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed dark brown sugar
  • 1 egg
  • 1/3 cup creamy peanut butter
  • 1 cup flour
  • 1 cup quick-cooking oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 1/2 cup peanut butter
  • 3-4 Tablespoons heavy cream
  • 2 cups semisweet chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease a 9 x 13" baking pan.

In a large bowl, cream together the butter and sugars until light. Add egg and peanut butter and mix until blended.

In another bowl, stir together flour, oats, baking soda and salt. Add to butter mixture and mix until blended. Pat into prepared pan.

Bake for 20-25 minutes or until lightly browned.

For icing, in a bowl, stir together the sugar, peanut butter and enough heavy cream to form a runny mixture. Remove baked bars from the oven and sprinkle with chocolate; let melt 2 minutes. Drizzle peanut mixture over chocolate and swirl topping with a spoon or butter knife. Let cool on a rack. Cut into 1 1/2 x 2" bars.
