Lime Pickles

  • 7 lbs. medium cucumbers
  • 2 c lime
  • 2 gallon water
  • 2 quarts vinegar
  • 4 1/2 lbs. white sugar
  • 1 T salt
  • 1 tsp. mixed pickling spice
  • 1 tsp. celery seed
  • 1 tsp. whole cloves



Step 1

Slice cucumbers in 1/4 inch slices. Cover with solution of lime and water, let soak for 24 hours. Then rinse well and cover with fresh water. Soak 3 hours longer.

Drain and cover with mixture of vinegar, sugar, salt and spices. Soak overnight (be sure there is enough solution to cover pickles)

In the morning, put on stove and boil for 40 minutes. Pack in sterilized jars and seal.
