Light and Easy Creamed Spinach

Ingredients

  • 2 (9 ounce)microwaveable fresh spinach
  • 1 tsp kosher salt
  • freshly ground pepper to taste
  • 3/4 cup heavy cream
  • 2 tbsp finely shredded Parmigiano-Reggiano Cheese
  • 1 pinch cayenne pepper
  • 1 pinch nutmeg
  • 1 tbsp butter
  • 1/2 white onion, finely chopped

Preparation

Step 1

1.Cook spinach per instructions on package, drain spinach, set aside
2.Mix slat, black pepper,cayenne pepper and nutmeg in a small bowl
3. Melt butter in a large skillet over medium heat, add onions and cook until translucent and lightly golden,4-5 minutes. Stir in seasoning mixture into onions and then pour in cream
4.Raise heat to medium high , stirring , until cream sauce is reduced in half, about 5 minutes
5.Reduce heat to low, add spinachto cream sauce. Cook and stir until spinach is heated through and coated about 2 minutes. Stir in Parmigiano cheese until thoroughly combined

NOTE: I serve this with meatloaf and mashed potatoes
