Apple Butternut Squash Soup

Ingredients
- 1 medium butternut squash, peeled, seeded and cubed
- 3 medium apples, cored and chopped coarsely
- 2 1/2 - 3 cups chicken or vegetable broth
- 1 medium onion, chopped
- 1/2 teas. rosemary
- 1/2 teas. marjoram
- 1 cup plain Greek yogurt
- salt and pepper to taste

Preparation
Step 1
In a large pot, combine squash, apples, broth, onion, rosemary, marjoram. Bring to a boil over medium high heat. Reduce to medium low and simmer uncovered for 30 minutes or until squash and apples are cooked thru and soft. Using an immersion blender, puree until smooth. Add Greek yogurt and blend until combined. Return soup to heat slowly being careful not to boil. Add salt and pepper to taste. Add a dollop of yogurt as a garnish.
