- 1 lb white mushrooms halved
- 1 sml red onion, cut into 8 wedges
- 2 tb olive oil
- 1 tsp fresh thyme leaves
- 4 chicken leg quarters (thighs and legs together)
- 1 tsp salt
- 1/4 tsp pepper

Step 1
preheat oven to 450*. Toss mushrooms, onion and thyme with olive oil in heavy skillet. Top with chicken, salt & pepper. Roast for 35-40 minutes or until cooked through (165*F)
