Ingredients

  • 2

    c. flour

  • 1 1/2

    t. baking powder

  • 1/2

    t. baking soda

  • 1/2

    t. salt

  • 1/4

    c. brown sugar

  • 1/2

    t. cinnamon

  • 1

    egg

  • 3

    T. vegetable oil

  • 1

    - 12 oz. bottle beer

  • 1/2

    t. vanilla

Directions

Combine flour, baking powder, baking soda, salt, brown sugar and cinnamon in a large mixing bowl. Make a well in the center and set aside. In a small bowl, whisk together egg, oil and vanilla. Add to dry ingredients along with beer. Stir lightly until just blended. Batter will be slightly lumpy and thick. Heat a greased griddle or skillet over medium heat. Griddle is ready when a few drops of water bubble and skitter rapidly around. Pour batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around the edges. Turn and cook other side until golden brown.
