Ingredients
- 1/4 c. butter, divided
- 1/2 c. chopped onion
- 1 clove garlic, minced
- 1 jar (12 oz.) roasted red peppers, drained and seed removed
- 1/4 c. flour
- 1 can (12 oz.) evaporated milk
- 1 can (14 oz.) chicken broth
- 1/2 t. salt
- 1/4 t. black pepper

Preparation
Step 1
Melt 2 tablespoons butter over medium heat in a saucepan. Add onion & garlic; cook stirring occasionally for two minutes. transfer onion mixture to a hand blender container. Add red peppers, cover & process until smooth.
Melt remaining butter in saucepan. Stir in flour and cook for one minute. Gradually stir in evaporated milk and broth. Cook stirring constantly until mixture comes to a boil. Stir in red pepper mixture, salt and pepper. Heat through.
