Ingredients

  • 1/4

    c. butter, divided

  • 1/2

    c. chopped onion

  • 1

    clove garlic, minced

  • 1

    jar (12 oz.) roasted red peppers, drained and seed removed

  • 1/4

    c. flour

  • 1

    can (12 oz.) evaporated milk

  • 1

    can (14 oz.) chicken broth

  • 1/2

    t. salt

  • 1/4

    t. black pepper

Directions

Melt 2 tablespoons butter over medium heat in a saucepan. Add onion & garlic; cook stirring occasionally for two minutes. transfer onion mixture to a hand blender container. Add red peppers, cover & process until smooth. Melt remaining butter in saucepan. Stir in flour and cook for one minute. Gradually stir in evaporated milk and broth. Cook stirring constantly until mixture comes to a boil. Stir in red pepper mixture, salt and pepper. Heat through.
