Ingredients

    eggplant, slices 1/4 inch thick

    t olive oil

    onion

    garlic cloves

    can lentils, drained

  • 1

    can diced tomatoes

  • 1/4

    c chopped parsley

  • 1

    t oregano

  • 1/4

    t cinnamon

  • 1/4

    t salt

  • pepper

  • 1/2

    c fat free half & half

  • 2

    eggs

  • 1/4

    c grated parmesan cheese

  • 1/8

    t nutmeg

Directions

heat oven to 425 lightly coat eggplant slices on a baking sheet & bake until softened 20 to 25 minutes. in saucepan, heat oil and add onion & garlic and cook 5 minutes. add lentils, tomatoes, parsley, oregano & spices. simmer about 20 minutes whisk together half & half. eggs, 2 T cheese and nutmeg in separate bowl. lightly coat an 8 x 8 baking dish with cooking spray & layer eggplant on bottom. spread 1/2 of the lentil mixture on top. repeat with remaining eggplant & lentils, ending with eggplant. pour half & half mixture on top, sprinkle with cheese & bake for 20 minutes covered and another 10 to 15 minutes longer uncovered until heated through.
