Ingredients

  • 10

    chicken pieces

  • Juice of 1 lemon

  • 1/4

    c. olive oil

  • 1/4

    c. honey

  • 1/2

    c. rose or white wine

  • 2

    cloves garlic smashed

  • 1

    T mixed dried herbs with lavender

  • 1 to 2

    T freshed minced parsley

  • Lemon slices

Directions

Put chicken pieces in freezer bag. Squeeze lemon juice into a bowl, add olive oil, honey and wine. Stir until honey is dissolved. Pour mixture into bag with chicken, then add garlic and herbs. Seal bag then mix contents well. Place bag in a dish and refrigerate overnight. Heat oven to 325 degrees. Put chicken skin side up into roasting pan with marinade. Cover pan with foil. Cook for two hours, then remove from foil and turn up oven to 425. Cook for 15 to 25 min or until chicken skin is browned. Keep an eye on it. Place chicken onto a warmed platter. Spoon off excess fat from pan. Move pan onto burner over medium heat. Add 1/2 water to pan juices, deglaze and pour over chicken. Optional: garnish with parsley and lemon slices.
