Philly Cheesesteaks

Ingredients

  • 2 yellow onions, quartered, sliced 1/4" thick
  • 6 Tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 3 red bell peppers, seeded, sliced 1/4" thick
  • 1/2 pound mushrooms, sliced 1/8" thick
  • 2 1/4 pounds chick eye steak, sliced paper thin
  • 1 pound thinly sliced provolone cheese
  • 6 soft hoagie rolls, split lengthwise, warmed

Preparation

Step 1

In bowl, combine onions, 3 Tablespoons oil, salt and pepper. Place on griddle; cook, stirring occasionally with spatula, 3-5 minutes. Add bell peppers and stir. Cover grill; cook and stir about 15 minutes. Move vegetables to the side of the griddle, or transfer to a bowl and cover.

In bowl, combine mushrooms, 1 Tablespoon oil, slat and pepper. Cook mushrooms on griddle about 5 minutes; add to onions and bell peppers.

Drizzle 2 teaspoons oil on griddle. place one-third of steak on griddle in a single layer. Cook, chopping lightly with spatula, 1-2 minutes per side. Arrange meat on half of griddle and vegetables on other half. Place 1/3 of cheese in single layer on meat. Cover griddle; cook about 1 minute. Transfer meat, cheese and 1/3 of vegetables to 2 rolls. Repeat to make remaining sandwiches.

Makes 6 sandwiches.
