Ingredients

  • 2 Cups Sugar
  • 2 Cups Flour
  • 2 t Baking Soda
  • 2 t Cinnamon
  • 1/2 t salt
  • 3 Large Eggs
  • 2/3 Cup Oil
  • 3/4 Cup Buttermilk
  • 2 t Vanilla
  • 2 Cups Crushed Pineapple, we'll drained
  • 2 Cups Grated Carrots
  • 1 Cup Chopped Peacons
  • 2 Cups Coconut

Preparation

Step 1

Sift together dry ingredients, beat eggs and add oil buttermilk, sugar and vanilla, mix thoroughly, add to dry ingredients, mix well. Add pineapple, nuts, carrots, and coconut, stir well and pour into well greased pan. Bake at 350 for about 1 hour.
