Breakfast Burrito Casserole

Ingredients

  • Several flour tortillas cut in strips or small squares
  • Sausage, bacon or ham
  • Onion, diced
  • Potato (left over baked potato works well)
  • Cheese, shredded
  • Scrambled eggs
  • Green chili enchilada sauce

Preparation

Step 1

Brown your favorite breakfast meat with diced onion. Scramble eggs and dice potato either peeled or unpeeled (your preference). Spray bottom and sides of casserole dish with non-stick spray. Cover the bottom with cut flour tortillas. Spoon in meat mixture, top with potato, scrambled eggs and shredded cheese. Pour enchilada sauce over the top and cover with more cut flour tortillas. Heat in a 350 degree oven until heated through and tortillas are slightly crisp.
This is a really good breakfast dish to make the night before. Just pop it in the oven when you get up in the morning and it's ready to eat by the time you've showered, dressed and put on your makeup!
