Ingredients
- 2 large egg whites
- 1 cup sugar
- 1/4 cup water
- 1 tlb lemon juice ( 1 lemon)
- 1 tlb corn syrup

Preparation
Step 1
COMBINE all ingredients in bowl of mixer and set over medium saucepan filled with barely 1 inch of simmering water
DO NOT LET BOWL TOUCH WATER
COOK, stirring constantly until mixture reaches 160* ( 5 to 10 minutes)
TRANSFER to mixer
USING whisk attachment, whisk on medium speed until soft peaks form ( 5 minutes)
INCREASE speed to medium high and whisk for another 5 minutes. Stiff peaks will form
USE IMMEDIATELY
