Breakfast Casserole

Ingredients

  • 1 can Pillsbury grand biscuits
  • 1 8 oz. package fully cooked bacon
  • 1 8 oz.package Velveeta shreds
  • 1/4 c. sour cream
  • 8 eggs
  • salt and pepper
  • chopped green onion (optional)
  • Pico de Gallo (optional)

Preparation

Step 1

Preheat oven to 350 degrees. Lightly spray 9x13 pan. Cut biscuits into 4 pieces and place at bottom of pan. Layer bacon eggs, sour cream, salt and pepper. Layer bacon and Velveeta over biscuits. In bowl, whisk eggs, sour cream, salt and pepper. Pour over biscuits. Bake 30-40 minutes or until golden brown. Garnish with green onion and pico de gallo.
