Spinach artichoke dip

Ingredients

  • 2 T butter
  • 1 med. onion,peeled,chopped
  • 6 cloves garlic,chopped
  • 1 pack. chopped spinach, thawed,squeezed dry
  • 1 jar 6 oz. marinated artichokes,drained and chopped
  • 1 8oz pack. cream cheese
  • 1/2 pint sour cream
  • 1 1/2 c. shredded N.Y. cheddar cheese
  • 1/2 c. grated Parmaesan cheese
  • 1 t.paprika
  • 1 t. black pepper
  • 1/2 t. salt

Preparation

Step 1

Heat oven to 350
In a large skillet,melt butter over med. heat. Add onion and cook for about 8 min. stirring occasionally, until golden. Add garlic and cook for about 1 min. Stir in spinach, artichokes, cream cheese, sourcream, 1 Cup of the cheddar cheese, the Parmesa, paprika, pepper, salt. Stir well
Place dip in a over-proof 2 quart dish and top with remaining 1/2 C. of cheddar cheese. Bake at 350 for 10 min. or until warmed through. Serve with chips or crackers on the side.
