Spinach Quiche
Nothing beats a good quiche for breakfast or brunch, and spinach quiche is a classic. Just mix up your filling the night before and store it in the fridge overnight. In the morning, pour filling into a pre-baked crust. Just a half an hour in the oven and it's ready!

Ingredients
- 12-oz. pkg. frozen spinach soufflé, thawed
- 2 eggs, beaten
- 3 T. milk
- 2 t. onion, chopped
- 3/4 c. Italian ground pork sausage, browned and drained
- 1/2 c. sliced mushrooms
- 3/4 c. shredded Swiss cheese
- 9-inch pie crust, baked
Preparation
Step 1
In a bowl, mix together all ingredients except crust; cover and refrigerate overnight if making ahead. In the morning, pour mixture into crust. Bake at 400 degrees for 30 to 40 minutes, until golden and center is set. Cut into wedges. Serves 6.
