7 Phone Call Soup (Butternut Squash Soup)
We got this recipe from my brother's friend Cathy.
- 6 Tbsp onion, chopped
- 4 Tbsp butter
- 2 lbs butternut squash, cubed
- 4 cups of chicken broth (we used veggie broth)
- 1/2 tsp marjoram leaves
- 1/4 tsp ground black pepper
- 1/8 tsp red pepper
- 8 oz cream cheese
Saute onions in butter. Add squash, broth, marjoram, black pepper and red pepper. Bring to boil, cook 20 minutes or until squash is tender.
Puree in blender, adding cream cheese until smooth. I do this in small batches and use about a quarter of the cream cheese each time. Return to pot and heat through. Do not allow to boil.
