Ingredients
- 1 drained can of black beans OR
- 1 1/2 cups soaked & cooked Chana dahl or other beans
- 2 eggs + 4 egg whites OR 2/3 cup carton 100% egg whites
- 4 Tbs cocoa powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 Tbs coconut oil or butter
- 2 tsp vanilla
- 1/3 cup ricotta or cream cheese
- 4 Tbs Truvia + 1/4 tsp Nunaturals stevia (or 2 Tbs. more Truvia)
Preparation
Step 1
Process all ingredients in blender (or food processor?) for 3-5 minutes.
Pour into grease baking tray and bake at 350 for 30-35 minutes.

"Special Agent Brownie Cake makes the perfect quick breads! Blueberry Cinnamon, Banana Nut, and Chocolate--all from one batch.
Follow the recipe using white beans, and omit the cocoa powder. Divide the batter into thirds in separate bowls. I used 1/3 - 1/2 cup blueberries for the blueberry loaf and sprinkled with cinnamon. For the banana nut, I added 1/2 Tbs of banana extract and a handful of chopped walnuts, and for the chocolate loaf I added about 2 heaping Tbsp. of cocoa and added a little extra sweetener. Bake in mini bread pans. Cooking time remained the same."
