Banana Cupcakes & Peanut Butter Frosting

These cupcakes are light and fluffy and oh so yummy. Topped with peanut butter frosting and drizzeled with fresh raspberry syrup.

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, melted
  • 1 1/2 cup mashed bananas
  • 2 eggs room temp
  • 1/2 tsp pure vanilla extract
  • Peanut Butter Frosting
  • 1/2 cup creamy peanut butter
  • 1 -8oz pkg cream cheese, softened
  • 1 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Preparation

Step 1

Bake 350 degrees. Line cupcake pan with liners.

In mixer whisk together flour,sugar,baking powder and soda and salt. Create a well in the flour mixture and add melted butter,bananas eggs and vanilla. Switch to a flat beater and mix until just combined. Try not to overmix.
Fill liners
Bake 17-20 min or untill toothpick inserted comes out clean.
Cool before frosting.

For frosting

In mixer cream peanut butter and cream cheese till light and fluffy. Slowly add powder sugar till combined, add vanilla.

Pipe onto cupcakes and drizzle with raspberry syrup or your favorite topping.
