Individual Ground Pork and Quinoa Meatloaf

Ingredients

  • 1 lb. Lean Ground Pork
  • 1/4 cup small onion, chopped (about 1/4 cup)
  • 1/4 cup carrot, chopped
  • 1 stalk of celery, chopped
  • 1/4 cup bell pepper, chopped
  • 1 clove garlic, minced
  • 1 tbls parsley
  • 1 cup cooked quinoa
  • 2 egg whites
  • 1 Tbls ketchup
  • 1 tbsp soy sauce (or sub. coconut aminos)
  • 1/2 tsp. tumeric
  • pepper to taste

Preparation

Step 1

Preheat oven to 350 degrees
Mix all ingredients together.
Spray muffin tins and scoop mixture into each cup. (You can also use silicon muffin pans.)
Bake for 25- 0 minues or until throughly cooked.
