Ingredients
- 1 lb (450 g) shrimp, peeled and deveined
- 1 20-ounce (560 g) can pineapple chunks, juice reserved
- 2 red bell peppers (capsicums), cored, seeded, and cut into 1-inch (3 cm) chunks
- 1/2 lb (225 g) mushrooms, stems removed
- 2 cups (500 ml) cherry tomatoes

Step 1
Thread the shrimp, pineapple chunks, bell pepper, mushroom caps, and cherry tomatoes onto skewers. Cook the kabobs over hot coals, basting frequently with the reserved pineapple juice and turning once or twice, until the shrimp are firm and opaque and the vegetables are heated through, about 6 to 8 minutes. Serves 4 to 6.
