Bacon Cheddar Corn Muffins

Ingredients

  • 4.5 oz. all purpose flour (about 1 cup)
  • 3/4 c yellow cornmeal
  • 1/2 c shredded sharp cheddar cheese
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp ground cumin
  • 1/4 tsp salt
  • 4 center cut bacon slices, cooked, drained and crumbled
  • 1 jalapeno pepper, seeded and minced
  • 1 1/4 c low fat buttermilk
  • 1/4 c canola oil
  • 1 large egg, lightly beaten
  • Cooking spray

Preparation

Step 1

Preheat oven to 375 degrees.

Mix together flour, cornmeal, sugar, baking powder, baking soda, cumin and salt.

Mix together cheese, bacon, jalapeno, buttermilk, oil and egg.

Lightly spray muffin tins. Mix together the wet mixture into the dry mixture. Spoon batter into muffin tins.

Bake until a toothpick inserted into the muffins comes out clean.

Cool and eat!
