Ingredients
- 1 cup soft shortening
- 2 cups brown sugar, lightly packed
- 2 eggs
- 1/2 cup cold coffee
- 3 1/2 cups sifted flour
- 1 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 2 1/2 cups raisins
- 1 1/4 cups nuts, such as walnuts
Preparation
Step 1
Preheat oven @ 400.
Cream shortening and brown sugar together. Add and mix in eggs. Stir in coffee. Sift flour, salt, nutmeg and cinnamon together. Stir into batter. Add and mix in raisins and nuts.
Chill at least 1 hour. Drop rounded teaspoonfuls about 2" apart on lightly greased cookie sheet. Bake until set.....just until when touched lightly with finger, and almost no imprint remains. Approximately 8-10 minutes.
