Mediterranean chicken with Sundried tomatoes and Mushrooms

Ingredients

  • 1/4 cup sun-dried tomatoes
  • 4 bonesless chicken breasts
  • 2 tbsp olive oil
  • 1 shallot, chopped; 2 cloves garlic, minced
  • 2 cups sliced assorted mushrooms
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 1/2 cup chicken stock or water
  • 1/4 cup fresh basil
  • salt and pepper to season

Preparation

Step 1

Soften tomatoes in a little warm water, 5-10 min; drain
Cut into slivers and set aside
Large skillet, brown chicken in oil over med/hi, remove
Add shallots and garlic to skillet, cook briefly until softened
Add mushrooms and stir fry until softened
Add wine, paste, stock and sun-dried tomatoes
Bring to boil, stirring. Return chicken and juices to pan, reduce heat and simmer 6-8 min until chicken cooked, turning once.
Transfer chicken to platter,
Add basil to sauce to sauce, season with salt and pepper and spoon over chicken
