Aunt Yetta's Poppy Seed Cookies
This recipe is from Aunt Yetta, who used to bring these cookies to our house -- usually in a shoebox lined with wax paper.
- 2 c flour
- 1 egg
- 1/2 sugar (use 1/3 if you prefer less sweet)
- 1/2 t salt
- 1/4 c poppy seeds
- 2 t baking powder
- 1/2 c corn or canola oil
- 1/4 c cold water
- 1 medium to large chopped onion
Preheat oven to 400 degrees.
Mix dry ingredients, then add liquids. Blend well, then let stand for one hour. If using onions, add before letting dough sit. Divide dough in half, and roll (on wax paper or lightly floured board) until you have a sheet about 1/8 inch thin. Place on cookie sheet and, using a pizza cutter or knife, cut diagonally into diamonds (repeatedly criss-crossing sheet).
Bake in 400 degree oven for 10 to 20 minutes. Cookies should be a dark tan color.
