Ingredients

  • 4 lbs potatoes
  • 5-6 cups of flour
  • 1 tsp of salt
  • 2 eggs
  • 2 tbsps of butter

Preparation

Step 1

Boil potatoes and put through ricer.add slightly beaten eggs,butter and salt. Gradually add about 5 cups of flour.knead until smooth and manageable dough is obtained. roll dough into long ropes like strip about 3/4 inch thick cut in 3/4 inch pieces
dip in four and then dent each one with your finger.in 8 quarts of boiling water,add 2 tbsps .salt and then boil the gnocchi for 10 mins
drain and rinse in cold water serve with meat sauce and grated parmigiano or romano cheese
