Chicken with creamy Spinach and Shallots

Ingredients

  • 2 Tbsp olive oil
  • 4 chicken breasts, pounded and cut in half (8 pieces total)
  • 4 shallots, thinly sliced
  • 1/4 cup dry white wine (Sauvignon Blanc)
  • 1/4 cup sour cream
  • 2 bunches spinach (8 cups)

Preparation

Step 1

Heat the oil in a large skillet over medium-high heat. Season the chidken with 1/2 tsp salt and 1/4 tsp pepper and cook until brown and cooked through.

Remove chicken from pan and set aside.

Add shallots to pan and cook until soft, 2 - 3 minutes.

Stir in the wine and sour cream. Add spinach, 1/4 tsp salt and 1/4 tsp pepper. Cook tossing gently until spinach is wilted.

Serve spinach alongside chicken.
