AIOLI****Orange and Saffron Aïoli

Had with seafood and clam bourride. Very good. Also try with steamed or grilled fish.

Update - 6/9/11 - I had it with Mediterranean Tuna Cakes and it overpowered them - it's still very good but it was too strong for that dish. Again - try with a simple steamed or poached fish.

Ingredients

  • 8 servings
  • 2 cloves garlic
  • 1/4 tsp. salt
  • 1/2 cup Hellmann's Light
  • pinch saffron threads
  • pinch grated orange rind

Preparation

Step 1

* Soak saffron in a tsp of hot water or orange juice to soften.

* Place the garlic on a cutting board, sprinkle with salt and mash to a paste with the flat of a chef’s knife. Stir into mayonnaise with remaining ingredients.
