Ingredients

    Tbsp. bacon drippings

  • 1

    cup green onions and tops, cut up

  • 1

    cup celery, diced

  • 1

    cup mushrooms, sliced small

  • 4

    cups cooked long grain rice

  • 3

    Tbsp. soy sauce, more if needed

  • 2

    Tbsp. kecap (sweet soya sauce)

  • 1/2

    lb. low-salt bacon, cooked

  • 1

    cup cooked chicken, cut into small pieces

  • 1

    cup BBQ pork, cut into small pieces

  • 1

    cup cooked shrimp, cut into small pieces

Directions

Dry the rice in a paper towel to remove all moisture. Cut bacon slices up into 1" pieces. In a large wok, cook bacon until crisp, remove from fat and set aside, reserving drippings. Add 3/4 cup onions, celery and mushrooms. Cook till tender. Add rice, soy sauce and kecap. Cook 5 minutes on low heat stirring occasionally. Add bacon, BBQ pork, chicken and shrimp and mix well. Taste and adjust soya and kecap as desired. Serve when everything is warmed through after sprinkling the remaining onions on top.
