Ingredients

  • 1-1/2 lbs of stewing beef
  • 1/2 cup all purpose flour
  • 1/2 tsp pepper
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 2 can beef consomme
  • 1 cup water
  • 1/2 cup sherry
  • 1/2 cup red wine
  • 1 cup beef broth
  • 4 carrots cut diagonally
  • 1 can of tomatoes drained (19 oz)
  • 1 cup chopped sliced mushrooms
  • 1 red pepper chopped
  • 1 celery stalk cut diagonally into pieces

Preparation

Step 1

1. Cut the stewing beef into bite sized pieces.
2. Conbine the meat with 1/4 cup of flour with pepper. Toss
3. In large heavy saucepan or Dutch oven, heat butter and oil oer medium high heat. Brown beef in batches,then set aside.
4. Add onions,celery,red peppers, and garlic, cook, stirring for 3 to 5 minutes or until softened. Add oregano, basil and remaining 1/4 cup flour, cook stirring for 30 seconds. Fry up mushrooms on butter in a separate pan until golden brown.
5. Pour in beef consomme, water wine beef broth and sherry, stirring to scrape up the brown bits from bottom of pan, bring to boil.
6. Return meat to pan along with carrots and tomatoes, mushrooms, celery and red peppers.
7. Return meat to pot.Bring to a boil then simmer covered for 1 hour.
Serve over mashed potatoes.
