- BROWN SUGAR TOPPING
- 1/3 cup flour
- 1/3 cup firmly packed brown sugar
- 1/2 teaspoon cinnamon
- 3 tablespoons butter, chilled and chopped
- MUFFINS
- 2 cups flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/4 cup vegetable oil
- 1/4 cup (1/2 stick) unsalted butter, melted
- 1/3 cup sugar
- 1/3 cup firmly packed brown sugar
- 1 egg, beaten
- 1 cup applesauce
- 1 cup chopped peeled apple
Preparation
Step 1
For the topping, combine the flour, brown sugar and cinnamon in a bowl. Cut in the butter with a pastry blender or 2 knives until crumbly.
For the muffins, preheat the oven to 400 degrees F. Grease 12 muffin cups. Combine the flour, baking powder, baking soda, salt, cinnamon, and cloves in a large bowl. Combine the oil, butter, sugar, brown sugar, egg and applesauce in a medium bowl and mix well. Add to the dry ingredients and stir just until combined. Fold in the apple.
Fill the prepared muffin cups. Sprinkle with the topping, gently pressing the topping into the batter. Bake for 15 to 17 minutes or until the topping is golden brown and a wooden pick inserted in the center of a muffin comes out clean.
