Chicken Peanut Stir-Fry

Ingredients

  • 2 T soy sauce
  • 1 1⁄2 T cornstarch
  • 1 ⁄2 t salt
  • 1 ⁄4 t ginger
  • 1 ⁄4 t garlic powder
  • 1 ⁄2 t oil
  • 1 1/2 c chicken broth
  • 1 lb boneless chicken breasts, slice in strips
  • 2 1⁄2 c small broccoli florets
  • 1 ⁄2 c chopped salted peanuts
  • white rice

Preparation

Step 1

Combine 1 cup of broth, soy sauce, corn starch, salt, ginger, & garlic powder. In no-stick skillet, stir fry chicken in heated oil, 2 min. Remove. Add 1⁄2 c broth to skillet; bring to boil. Add broccoli. Reduce heat; cover & simmer 2 min until crisp-tender. Increase to high. Add chicken & sauce; stir to thicken. Stir in peanuts.
Serve over steamed rice.
