Raspberry Vinaigrette Salad Dressing

Perfect for a simple salad. Use the dressing as a sauce to drizzle thinly sliced grilled chicken or pork. Turns a piece of broiled or grilled salmon in a restaurant dish.

Ingredients

  • 1/4 cup Splenda sweetened sugar free raspberry preserves (Polaner or Smucker's)
  • 1 T. red wine vinegar
  • 1 t. Splenda
  • 1 T. lemon juice
  • few drops Tabasco
  • 1 T. Dijon mustard
  • 1/4 cup olive oil
  • 1/4 t. seal salt
  • few grinds of black pepper

Preparation

Step 1


Warm preserves slightly to melt. Whisk in remaining ingredients. Drizzle 2 tablespoons water and whisk until thick and emulsified. Toss with favorite greens in large bowl until lightly coated and serve immediately.
