Ingredients

  • Sift together:
  • 3 eggs
  • 1 c sugar
  • 2/3 c of pumpkin
  • 1 t of lemon juice
  • Beat eggs on high for 5 min and gradually add sugar, pumpkin and lemon juice
  • 3/4 c cake flour
  • 1 t baking powder
  • 2 t t cinnamon
  • 1 t ginger
  • 1/2 t nutmeg
  • 1/2 t salt
  • filling;
  • 1 C POWERED SUGAR
  • 2- 3 OZ. CREAM CHEESE
  • 4 T. OLEO
  • 1/2 t VANILLA
  • BEAT UNTIL SMOOTH. SPREAD AND ROLL AGAIN. CHILL

Preparation

Step 1

fold into pumpkin mixture. Spreadon greased and floured jelly roll pan. Sprinkle with 1/2 c finely chopped nuts and bake at 375' for 15 min. Turn out on towel sprinkled with powdered sugar. Start at narrow end and roll towel and cake together. Cool for 1 to 2 hrs. unroll andfill with fillig.
