Ingredients
- Sift together:
- 3 eggs
- 1 c sugar
- 2/3 c of pumpkin
- 1 t of lemon juice
- Beat eggs on high for 5 min and gradually add sugar, pumpkin and lemon juice
- 3/4 c cake flour
- 1 t baking powder
- 2 t t cinnamon
- 1 t ginger
- 1/2 t nutmeg
- 1/2 t salt
- filling;
- 1 C POWERED SUGAR
- 2- 3 OZ. CREAM CHEESE
- 4 T. OLEO
- 1/2 t VANILLA
- BEAT UNTIL SMOOTH. SPREAD AND ROLL AGAIN. CHILL

Step 1
fold into pumpkin mixture. Spreadon greased and floured jelly roll pan. Sprinkle with 1/2 c finely chopped nuts and bake at 375' for 15 min. Turn out on towel sprinkled with powdered sugar. Start at narrow end and roll towel and cake together. Cool for 1 to 2 hrs. unroll andfill with fillig.
