  • 3 medium heirloom tomatoes, assorted colours, diced, juices reserved
  • 1 small red onion, dices
  • 3 cloves garlic., finely diced
  • 1 bunch Italian parsley, finely chopped
  • 2 tbsp. French capers
  • Juice and zest of 1 lemon
  • 2-3 tbsp. extra virgin olive oil
  • Salt an pepper to taste



Step 1

Place all prepared ingredients in a bowl and toss. Cover and refrigerate for an hour.
Bring to room temperature before serving.
