- 3 medium heirloom tomatoes, assorted colours, diced, juices reserved
- 1 small red onion, dices
- 3 cloves garlic., finely diced
- 1 bunch Italian parsley, finely chopped
- 2 tbsp. French capers
- Juice and zest of 1 lemon
- 2-3 tbsp. extra virgin olive oil
- Salt an pepper to taste
Place all prepared ingredients in a bowl and toss. Cover and refrigerate for an hour.
Bring to room temperature before serving.
