vegan split pea soup

Ingredients

  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 1 cups dried split peas
  • 1 teaspoons salt
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 potatoes, diced
  • 4 c vegetable broth
  • 1/2 teaspoon ground black pepper
  • 1/2 tsp tumeric

Preparation

Step 1

1.In a large pot over medium high heat, melt butter and saute the onion, celery and carrot, salt and pepper for 7-10 minutes. Add the peas, potato, broth and tumeric. Bring to a boil, cover and reduce heat to low. Simmer for 1 hours, stirring occasionally.
