Quahaug Stuffing (Aunt Irene)

Ingredients

  • Quahaugs
  • 5 sweet green peppers
  • 4 onions
  • 1/2 pound linguica
  • 1/2 pound hamburger
  • 2 Vienna breads
  • salt and pepper
  • 1/2 pound butter
  • 2-3 eggs

Preparation

Step 1

Steam quahaugs, let cool.
Soak two loafs of bread in water.

Grind together 5 sweet peppers, 4 onions, 1/2 pound linguica, 1/2 pound ground hamburger, and quahaugs. Cook ground ingredients in a large skillet with oil: add salt and pepper.
After the items are browned add 3/4 of the 1/2 pound of butter.
Transfer the hot and browned mixture to a bowl with the pre-soaked bread. Take 2-3 well beaten eggs and add them to the mixture.
Place the mixture in a pan, dot with the remaining butter and bake in a moderate oven.
