  • 1 can corn (drained)
  • 2 c. shredded cheddar or Monterey cheese
  • 1/2 c. salsa
  • 2 T chopped cilantro (optional)
  • 6 tortillas

Step 1

Spray an unheated skillet with cooking spray. Stir together the corn, cheese, 1/2 c. salsa and cilantro. Spread over half of each tortilla. Fold in half. Cook in skillet or griddle 1 minute per side or until lightly browned. Serve with additional salsa
