Quick Chicken and Dumplings

Pick up a rotisserie chicken from your grocery deli. One whole roasted chicken yields about 3 cups chopped meat.

Ingredients

  • 4 cups Chicken stock
  • 3 cups chopped chicken
  • 2 (10 3/4-ounce) cans cream of chicken soup
  • 2 tsp chicken bouillon granules
  • 1 tsp seasoned pepper
  • 1 (6 ounce) can refrigerated buttermilk biscuits

Preparation

Step 1

Bring 4 cups of chicken stock and next 4 ingredients to a boil in a Dutch oven over medium-high heat, stirring often.

Separate biscuits in half, forming 2 rounds; cut each round in half. Drop biscuit pieces, 1 at a time, into boiling mixture; stir gently. Cover, reduce heat to low, and simmer, stirring occasionally, 15-20 minutes or until dumplings are cooked.
