No-Bake Granola Bars

Ingredients

  • 2 cups flaked cereal (such as Kellogg's Smart Start)
  • 2 cups quick-cooking oats (not instant)
  • 1/2 cup chocolate-covered raisins
  • 1/2 cup coarsely chopped peanuts
  • 1/2 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup plus 2 tbsp creamy peanut butter
  • 2 tbsp canola oil
  • 1 tsp vanilla extract

Preparation

Step 1

Lightly butter a 9-inch square pan, or coat it with cooking spray.

In a large bowl, mix cereal, oats, raisins and peanuts.

In a small saucepan, stir brown sugar and corn syrup over low until mixture starts to boil. Remove from heat. Stir in peanut butter, oil and vanilla.

Pour peanut butter mixture over cereal; stir until combined. Spoon into pan. Press firmly so batter spreads evenly. Cool; cut into 12 bars. Bars may be frozen, well wrapped, for up to 3 months.
