Italian Wedding Soup*
- 1 pound ground beef
- 1 pound (low fat) Italian sausage
- 1/2 cup Romano cheese
- 1/2 cup Parmesan cheese
- 1/2 cup flavored bread crumbs
- 2 eggs (well beaten)
- 1-2 cloves crushed garlic
- 3 qts chicken broth
- 1 pound chopped spinach
- 1/5 box Acini di Pepe Pasta or 2 cups barley or rice)
Combine 1st 8 ingredients and roll into small meatballs. Broil in cast iron skillet or large baking pan coated with olive oil. Continue broiling until brown. Drain oil.
Bring broth to slow simmer. Add meatballs, chopped spinach and pasta. Cook until meatballs done (will float to top of pot) and pasta is tender.
