Ingredients
- 2 3/4 cups liquid (juice from canned peach slices plus water)
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. ground ginger
- 1 1/2 cups long grain rice
- 1/2 can peach slices, chopped (reserve juice)
- 1/8 cup almond slices
Preparation
Step 1
ISLAND RICE:
1. Heat liquid (water and peach juice), cinnamon, cloves and ginger to boiling. (Consider adding nutmeg as well.)
2. Add rice, cover and reduce heat. Simmer for 20 minutes or until liquid is absorbed.
3. Stir in chopped peach slices and almonds.
4. Serve with "Island K-Bobs"!
