Ingredients

  • Chicken:
  • 3/4 C lemon juice
  • 1/4 C olive oil
  • 1 T thyme leaves
  • 1 t salt
  • 4 skinless, boneless chicken breast halves
  • Salad:
  • 1 C sugar snap peas
  • 1/3 C red bell pepper strips
  • 1/2 C yellow bell pepper strips
  • 1/2 C zucchini slices
  • 2 T chopped cilantro
  • 1 T olive oil
  • Salt & pepper
  • 4 lemon wedges

Preparation

Step 1

For chicken,combine first 4 ingredients in large zip lock bag. Add chicken & marinate 1 hour.

Prepare grill
Remove chicken from marinade & place on grill; Grill 6 min on each side. Cool completely; cut into 1/4" slices

Flash cook snap peas; drain & rinse in cold water. Combine with next 7 ingredients in large bowl; add chicken, tossing to combine. Divide among plates & serve with lemon wedges.
