Tuna-Biscuit Casserole

A warm and tasty way to use tuna

Ingredients

  • 1/3 cup chopped green peppers
  • 3 Tbs chopped onion
  • 1 Tbs Olive Oil
  • 1 can cream of chicken soup or 1 can cream of mushroom soup
  • 1-1/2 C milk
  • 2 sm. cans or 1 lg. can tuna
  • 1 tsp lemon juice
  • 1 box of Bisquick
  • 1 8 oz package shredded sharp cheddar cheese

Preparation

Step 1

Cook peppers and onion in deep skillet with olive oil over medium heat about 5 minutes or until lightly browned, add soup & milk, heat and stir until thick & hot, do not boil, add tuna and lemon juice, mix well. turn off heat and keep warm while making biscuits.

Mix a double batch of biscuits (Bisquick recipe). Roll out like for jelly roll. Sprinkle with 1/2 pound sharp cheese, shredded. Roll up and cut about 1/2-inch thick. Put heated mixture in 9 x 13 casserole dish. Lay biscuits on top and bake at 425 degrees for about 20 minutes until biscuits are browned and done.
