Ingredients
- 2 turkey bacon slices, chopped
- 1/8 t. pepper
- 1/8 t. nutmeg
- 6 large egg whites, lightly beaten
- 1 large egg yolk, lightly beaten
- 1 1/2 C. thinly sliced sweet onion, separated into rings
- 2 T. water
- 1/4 t. sugar
- 4 c. torn spinach
- 1/4 C. shredded part skim mozzarella cheese
Preparation
Step 1
Cook bacon in 10' nonstick skillet over med. heat until crisp. Combine bacon slices and next 4 ingds(bacon through egg yolk) in a bowl, and stir well. Set aside.
Add onion to skillet; cover and cook 5 mins. or until crisp tender, stirring occasionally. Add water and sugar; saute 5 mins. or until onion is tender and golden brown. Add spinach; cover and cook 2 mins. or until spinach wilts. Stir in bacon mixture; spread evenly in bottom of skillet. Cook over med. low heat 5 mins. or until almost set.
Wrap handle of skillet with foil; place in oven, and bake at 450* for 5 mins. or until set. Sprinkle with cheese; bake an additional minute or until cheese melts.
Note: Substitute 1 cup egg substitute for 6 egg whites and 1 egg yolk, if desired.
