Ingredients

  • 1-1/2 cups butter or margarine, softened
  • 1 (1 lb) block sharp cheddar cheese, shredded
  • 4 cups all-purpose flour
  • 1-1/2 tsp. salt
  • 1 tsp. ground red pepper
  • 1/2 tsp. dry mustard
  • 1/2 tsp. paprika

Step 1

Beat butter and cheese at med. speed with electric mixer until blended; gradually add flour & remaining ingredients, beating until blended. Cover dough, and chill 2 hrs.

Shape dough into 4 (8 inch) logs; wrap in plastic wrap and chill 8 hrs. Cut into 1/4 inch slices and place on ungreased baking sheets.

Bake at 350 for 15-17 minutes or until lightly browned. Remove to wire racks to cool. Store in an airtight container. Makes about 10 dozen.

(I think I halved this recipe -- also, you can freeze the logs, then slice and bake from the frozen state; just add a couple of minutes to the baking time)
