Cookies: Sheryl Simpson's Ginger Cookies (Vic Blackwell)

Ingredients

  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 1 egg
  • 4 T molasses
  • 2 cups plain four
  • 2 t baking soda
  • 1/2 t salt
  • 1 t cinnamon
  • 1 T ginger

Preparation

Step 1

Mix oil and sugar well.
Add egg.
Stir in molasses.
Sift flour, soda, salt, cinnamon and ginger.
Stir by hand with wooden spoon. Do not use a mixer.
Use a teaspoon to shape in balls. Roll balls between hands and roll in granulated sugar.
Place sugared balls on un-greased cookie sheet.
Bake at 350 degrees.
