Neapolitan Cookies (Tri-Color Cookies)

Ingredients

  • 1 Can (12 oz.) Solo Almond Filling
  • 1 Cup Soft Butter
  • 1 Cup Sugar
  • 4 Egg Yolks
  • 2 Cups Flour
  • 4 Egg Whites
  • Red & Green Food Coloring
  • Seedless Raspberry Jam (or preserves)
  • Apricot Jam (or preserves)
  • 6 oz. Bag Semi-Sweet Chocolate

Preparation

Step 1

1. Mix butter, almond filling, sugar and egg yolks. Add flour. Beat egg whites until stiff.
2. Add mixture and fold in. Divide into 3 equal parts- one red, one green and one plain.
3. Spread evenly in pans. Bake 12-15 minutes at 350 until edges are brown.
4. Put raspberry jam and apricot on the layers and make a tri color cake.
