Harvest Bake

Ingredients

  • 1 lg onion, chopped
  • 2 Tbsp oil
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 2 lg zucchini or summer squash, chopped
  • 1 green pepper, seeded & cut into thin strips
  • 1 c corn
  • 2 lg tomatoes, sliced
  • 1/4 c grated Longhorn cheese

Preparation

Step 1

Preheat oven to 325.

In a skillet, saute the onion in oil until golden. Stir in seasonings.

Combine the squash, pepper & corn and place in the bottom of a shallow baking dish.

Top with the onion mixture.

Bake for 1 hour.

Top with tomatoes then cheese & bake uncovered 20-30 minutes or until cheese melts & bubbles.
